This is a wonderful as well (slightly healthy…ish) brunch dish. I love it because you get all the flavors of a ‘fry up’ with the freshness of salad and asparagus. I have done fried egg because there was all this delicious bacon fat that I didn’t want to waist, but if you want to do poach eggs…. go for it. Gents, make this for your beloved to kick off a great Sunday morning.
